Breads are the staple of life.  Every part of the world has some version of it.  Since the begining of time, man has had some form of it, that's where the word yummy came from, after eating the first piece.  Rolls, biscuits, tortillas pretty much go with any meal and is usually expected.  If the cowboys didn't get their fix of sourdough biscuits ol' cookie was in a heap of trouble.  In cold weather ol' cookie used to take the sourdough out of the chuck wagon and put it in his bedroll with him to keep it from freezing and dying.  He would have sure been in a sore mess if his riser would have quit him.  Sourdough has been around for thousands of years and to the folks who use it, a good one is a prize possession.  Some have been handed down thru generations of a family.  If you have not tried it, you should.  It is easy to make and takes little effort to keep it started and makes some very fine tasting baked goods.  Check the what's new pages to look on how to start you own and be on the trail to becoming the wagon boss of your outfit.

"TO GOOD HUNGER THERE IS NO HARD BREAD"

This is an often told tale illustrating the average cowboy's aversion to cooking.  A cowboy crew without a cook agreed to rotate the duty amoung the remaining cowpunchers and to bestow the honor permanently on the first man to complain about the chuck.  One day, one of the cowboy's bit into a biscuit and exclaimed; "THE BISCUIT IS BURNED ON THE BOTTOM, BURNED ON THE TOP, RAW IN THE MIDDLE, AND SALTY AS HELL, BUT I SURE LIKE EM' THAT WAY".
